Sunday Fall Favorite Recipes


Who doesn't enjoy a beautiful fall day like we are having here in Massachusetts! There isn't anything better on a Sunday in the fall like going outside for a nature walk in the morning, then coming home to bake and make some yummy healthy treats to eat during the week.


Up this week for a little meal prep:

Pumpkin Banana Chocolate Chip Cookies & Butternut Squash Soup


Pumpkin Banana Chocolate Chip Cookies

Ingredients:

2 bananas (medium size) mashed

½ cup pumpkin puree

¼ cup maple syrup

2 cups old fashion oats

Splash pure vanilla extract

1 tbs pumpkin pie spice

Handful of chocolate chips

Bake:

350 degrees for 15 minutes

Makes 12-4 cookies (depends on how big you make them)



Butternut Squash Soup

Ingredients: 4 cups vegetable broth

12oz cubed butternut squash OR 1 package already peeled and cubed butternut squash

½ large vidalia onion

½ apple peeled and cubed (I used a green apple)

Salt, pepper and nutmeg to taste

Prepare:

Place all ingredients EXCEPT salt, pepper and nutmeg in a pot and boil about 10-15 mins

Once brought to a boil, remove from pot and place into blender – add salt, pepper and nutmeg

TIP: blend in smaller batches – pour slowly to not burn yourself

**Takes about 30 mins start to finish
